Description
An easy Instant Pot dinner with ground beef, macaroni, Rotel tomatoes, and corn in a lightly spiced, cheesy tomato sauce.

- 8 oz lean ground beef
- 1/2 cup diced onion
- 1/2 tsp Montreal steak seasoning
- 1/8 tsp red pepper flakes
- 1 cup beef broth
- 4 oz elbow macaroni
- 1 (8 oz) can tomato sauce
- 1 (10 oz) can Rotel
- 1/2 tsp dried oregano
- 1 tsp chili powder
- 1 cup frozen corn
- 1/2 cup shredded cheddar cheese
Instructions
- Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the Montreal steak seasoning and red pepper flakes.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the macaroni. Dump tomato sauce and Rotel evenly over the macaroni. Sprinkle in the oregano and chili powder. Add in the corn.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes. Move valve to venting. Remove the lid.
- Stir in the cheese. Serve and enjoy!
