Description

An easy Instant Pot dinner with ground beef, macaroni, Rotel tomatoes, and corn in a lightly spiced, cheesy tomato sauce. 


Ingredients

  • 8 oz lean ground beef
  • 1/2 cup diced onion
  • 1/2 tsp Montreal steak seasoning
  • 1/8 tsp red pepper flakes
  • 1 cup beef broth
  • 4 oz elbow macaroni
  • 1 (8 oz) can tomato sauce
  • 1 (10 oz) can Rotel
  • 1/2 tsp dried oregano
  • 1 tsp chili powder
  • 1 cup frozen corn
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the Montreal steak seasoning and red pepper flakes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the macaroni. Dump tomato sauce and Rotel evenly over the macaroni. Sprinkle in the oregano and chili powder. Add in the corn.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes. Move valve to venting. Remove the lid. 
  5. Stir in the cheese. Serve and enjoy!
