Good Gosh Casserole–a Tex-Mex one-pot meal with ground beef, Spanish rice, green chiles, and ranch-style beans, all cooked in the Instant Pot or slow cooker and finished with melty cheddar cheese.

Good Gosh Casserole

This easy dinner is pantry-friendly and comes together quickly. With beef, beans and rice all in one pot it’s satisfying and filling. I fed this to Skyler and his friends and they all loved it. It’s easy to double and makes perfect lunch leftovers. This recipe is adapted from Good Gosh Casserole on Nance Co. The author states, “My mom made it growing up, and I’ve never really got tired of it.”

Ingredients/Substitution Ideas

  • Lean ground beef–or ground pork, turkey
  • Onion-or 1 Tbsp dry minced
  • Kosher salt
  • Black pepper
  • Water
  • Better than Bouillon beef base
  • Rice-a-Roni Spanish Rice
  • Diced green chiles
  • Ranch style beans–or chili beans
  • Cheddar cheese–or mexican blend

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt and pepper.

Pour in the water and scrape bottom of pot so that nothing is sticking. Stir in the Better than Bouillon.

Sprinkle in the rice. Dump in the green chiles and beans and sprinkle the seasoning packet from the rice on top. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir in the cheese and serve.

Notes/Tips

  • Serve with diced avocados, shredded lettuce and diced tomatoes. This also makes a great filling for burritos.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

Scale
  • 1 pound lean ground beef
  • 1/2 cup diced onion
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 1/2 cups water
  • 1/2 tsp Better than Bouillon beef base
  • 1 (6.8 oz) box Rice-a-Roni Spanish Rice
  • 1 (4 oz) can diced green chiles
  • 1 (15 oz) can ranch style beans (do not drain)
  • 1/2 cup shredded cheddar cheese

Instructions

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt and pepper. Transfer to the slow cooker.
  2. Stir in water, Better than Bouillon, rice and seasoning packet, green chiles and beans.
  3. Cover and cook on high for 2 hours, or until rice is tender.
  4. Stir in the cheese and serve.

    7/10/25 – Made this for dinner for Wife & I. It came out Awesome! Instant Favorite. Easy recipe. I used 1½ lbs of Aldi stew meat cut into small pieces. Used a small red onion diced and a jalapeño pepper diced. Great flavor. Served with fresh diced tomato and sour cream. This will become a regular for us.
