Fully Loaded Casserole–Instant Pot penne pasta with Italian sausage, roasted garlic sauce and parmigiano reggiano cheese.

Fully Loaded Casserole
This penne pasta is loaded up with all the good stuff! You’re going to love how easy it is to make a one pot pasta dish with your Instant Pot. No boiling the noodles separately. The ingredients just go into the pot and you walk away. This reminds me of lasagna without all the work. Enjoy!
Ingredients/Substitution Ideas
- Ground Italian sausage–I use mild Italian sausage
- Dry onion flakes–or 1 tsp onion powder
- Garlic powder
- Chicken broth–or beef broth
- Penne pasta–or mostaccioli
- Mezzetta roasted garlic sauce–or another pasta sauce you love
- Ricotta cheese–or cottage cheese
- Parmigiano reggiano cheese–or parmesan
Steps
Turn Instant Pot to saute setting. When display says HOT add in the Italian sausage and break it up. Brown for about 5 minutes. Drain off excess grease.

Stir in the onion flakes and garlic powder.
Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Sprinkle in the pasta.

Dump the pasta sauce over the top.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move the valve to venting and remove the lid.

Stir in the ricotta or cottage cheese and the parmigiano reggiano cheese.

Serve and enjoy!

Notes/Tips
- Serve with green salad and garlic bread.
- I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
- You can double this recipe in a 6 or 8 quart pot. Double ingredients and keep cooking time the same.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
- Other recipes you can make with cottage cheese are deceivingly delicious casserole and snuggled up chicken.
