Instant Pot Friendsgiving Casserole
Friendsgiving is a fun meal experience where friends gather together and each person brings a dish to share. Because it’s not actual Thanksgiving there can be a wide array of foods that you may or may not find at a traditional Thanksgiving dinner. I love this idea so much! In the past I’ve “sort of” wanted to host a thanksgiving dinner but not really because…you know. It’s so much work and I don’t think of myself as a real grown up yet. But I do think I could host a warm up for Thanksgiving with friends…a friendsgiving. That seems like super low pressure and if something doesn’t turn out then oh well! It’s just a casual friendsgiving.
This recipe is a chicken or turkey and gravy-like dish that you would serve over the top of whatever your friends happen to bring. Dressing/stuffing…yes. Green beans…yes. Rolls…yes. Mashed potatoes…yes. Next to a side of cranberry relish…yes. You get the idea. This turkey and sauce is so delicious you’ll want to lick it up off of your plate.
Ingredients/Substitution Ideas
- Sour cream–or 1 cup of heavy cream
- Flour
- Butter
- Onion
- Celery
- Chicken broth–or water and Better than Bouillon
- Boneless skinless chicken thighs or cooked chopped turkey–you can also use cooked and chopped chicken, like rotisserie chicken.
- Garlic powder
- Kosher salt
- Black pepper
- Poultry seasoning
- Celery salt
- Dried parsley
- French’s crispy fried onions
The Basic Steps
- Let sour cream come to room temperature so that it doesn’t separate.
- Saute onion and celery.
- Deglaze the pot.
- Add ingredients.
- Pressure cook.
- Temper the sour cream.
- Ladle the chicken/turkey and sauce over whatever you have on hand (mashed potatoes, stuffing, green beans, rolls, etc.) and top each individual portion with a small handful of the crispy fried onions.
Notes/Tips
- Serve on top of mashed potatoes or another choice.
- The sauce is fairly thin. If you’d like you can thicken the sauce with a cornstarch slurry or some instant mashed potatoes flakes.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days.

Description
Friendsgiving casserole is a chicken/turkey and gravy dish topped with french fried onions. Ladle it over any of your favorite Thanksgiving favorites like mashed potatoes or stuffing.
Ingredients
- 1 cup sour cream
- 2 Tbsp flour
- 2 Tbsp butter
- 1 cup diced onion
- 3 ribs of celery, diced
- 1 cup chicken broth
- 2 pounds boneless, skinless chicken thighs, trimmed of excess fat or 4 cups of cooked, chopped turkey
- 2 tsp garlic powder
- 3/4 tsp kosher salt
- 1 tsp black pepper
- 1 tsp poultry seasoning
- 1/2 tsp celery salt
- 2 tsp dried parsley
- 1 (6 oz) package of French’s crispy fried onions
Instructions
- Measure out the sour cream and flour and stir together in a bowl. Set on the counter to come to room temperature while you’re preparing the rest of the recipe.
- Turn Instant Pot to saute setting. When display says HOT add in the butter and swirl it around to melt. Add in the onion and celery and saute for 4 minutes.
- Pour in the broth and scrape bottom of pot so that nothing is sticking.
- Add in chicken, garlic powder, salt, pepper, poultry seasoning, celery salt and dried parsley.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 12 minute for frozen or fresh chicken thighs or 3 minutes for cooked, chopped turkey. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Add a cup of the hot liquid into the sour cream mixture and whisk well. Then pour the sour cream mixture into the pot and stir.
- If you used chicken thighs, break them up into pieces.
- Ladle the chicken/turkey and sauce over whatever you have on hand (mashed potatoes, stuffing, green beans, rolls, etc.) and top each individual portion with a small handful of the crispy fried onions.
