Description

Friendsgiving casserole is a chicken/turkey and gravy dish topped with french fried onions. Ladle it over any of your favorite Thanksgiving favorites like mashed potatoes or stuffing. 


Ingredients

  • 1 cup sour cream
  • 2 Tbsp flour
  • 2 Tbsp butter
  • 1 cup diced onion
  • 3 ribs of celery, diced
  • 1 cup chicken broth
  • 2 pounds boneless, skinless chicken thighs, trimmed of excess fat or 4 cups of cooked, chopped turkey
  • 2 tsp garlic powder
  • 3/4 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp poultry seasoning
  • 1/2 tsp celery salt
  • 2 tsp dried parsley
  • 1 (6 oz) package of French’s crispy fried onions

Instructions

  1. Measure out the sour cream and flour and stir together in a bowl. Set on the counter to come to room temperature while you’re preparing the rest of the recipe.
  2. Turn Instant Pot to saute setting. When display says HOT add in the butter and swirl it around to melt. Add in the onion and celery and saute for 4 minutes. 
  3. Pour in the broth and scrape bottom of pot so that nothing is sticking. 
  4. Add in chicken, garlic powder, salt, pepper, poultry seasoning, celery salt and dried parsley.
  5.  Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 12 minute for frozen or fresh chicken thighs or 3 minutes for cooked, chopped turkey. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. 
  6. Add a cup of the hot liquid into the sour cream mixture and whisk well. Then pour the sour cream mixture into the pot and stir. 
  7. If you used chicken thighs, break them up into pieces. 
  8. Ladle the chicken/turkey and sauce over whatever you have on hand (mashed potatoes, stuffing, green beans, rolls, etc.) and top each individual portion with a small handful of the crispy fried onions.
