Four Rivers Casserole–mashed sweet potatoes topped with pecans. This is an easy and fast way to make sweet potato casserole using your Instant Pot.

Four Rivers Casserole
Is it a side? Is it a dessert? Either way it’s delish! This recipe is adapted from 4 Rivers Casserole on Central Florida Lifestyle, “Chef John Rivers created a Sweet Potato Casserole recipe that includes brown sugar, cinnamon, ginger and nutmeg to put a little sweetness on the dinner table. Top it off with chopped pecans for crunch and you have yourself a side dish disguised as a dessert.”
I took the original recipe and simplified it and made it into an Instant Pot recipe. Peeling and cubing the sweet potatoes is the most labor intensive part of the recipe! This is yummy hot or cold and reminds me of Thanksgiving, although I like to eat it any time of the year.
Ingredients/Substitution Ideas
- Sweet potatoes
- Butter
- Brown sugar
- Kosher salt
- Vanilla
- Cinnamon
- Ground ginger
- Nutmeg
- Pecans
- Cinnamon sugar
Steps
Add 1 ½ cups of water to bottom of Instant Pot. Add cubed sweet potatoes into a steamer basket. Drop the basket into the Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up move valve to venting and remove the lid.

Remove the steamer basket and discard the water in the pot.
Dump the sweet potatoes into the Instant Pot liner. Mash. Stir in the butter, brown sugar, salt, vanilla, cinnamon, ginger and nutmeg.

In a bowl add the pecans and 1 Tbsp of butter. Microwave until butter is melted. Stir. Sprinkle in cinnamon sugar to taste.
Scoop some of the sweet potatoes into a bowl and top with a couple tablespoons of the pecans. Eat and enjoy!

Notes/Tips
- Serve as a side dish (or dessert). Some people like this for thanksgiving or the holidays but I like it any time of year!
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- This recipe can easily be doubled or tripled.
- This recipe is gluten free.
- I like using my Avokado silicone steamer basket* for this recipe.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
