Description
Mashed sweet potatoes topped with pecans. This is an easy and fast way to make sweet potato casserole using your Instant Pot.

- 1 1/2 pounds sweet potatoes, peeled and cubed
- 2 Tbsp butter
- 1/4 cup brown sugar
- 1/4 tsp kosher salt
- 1/4 tsp vanilla
- 1/8 tsp cinnamon
- Dash of ginger
- Dash of nutmeg
- 1/2 cup chopped pecans
- 1 Tbsp butter
- Cinnamon sugar, to taste
Instructions
- Add 1 ½ cups of water to bottom of Instant Pot. Add cubed sweet potatoes into a steamer basket. Drop the basket into the Instant Pot.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up move valve to venting and remove the lid.
- Remove the steamer basket and discard the water in the pot.
- Dump the sweet potatoes into the Instant Pot liner. Mash. Stir in the butter, brown sugar, salt, vanilla, cinnamon, ginger and nutmeg.
- In a bowl add the pecans and 1 Tbsp of butter. Microwave until butter is melted. Stir. Sprinkle in cinnamon sugar to taste.
- Scoop some of the sweet potatoes into a bowl and top with a couple tablespoons of the pecans. Eat and enjoy!
