Description

Mashed sweet potatoes topped with pecans. This is an easy and fast way to make sweet potato casserole using your Instant Pot. 


Ingredients

Scale
  • 1 1/2 pounds sweet potatoes, peeled and cubed
  • 2 Tbsp butter
  • 1/4 cup brown sugar
  • 1/4 tsp kosher salt
  • 1/4 tsp vanilla
  • 1/8 tsp cinnamon
  • Dash of ginger
  • Dash of nutmeg
  • 1/2 cup chopped pecans
  • 1 Tbsp butter
  • Cinnamon sugar, to taste

Instructions

  1. Add 1 ½ cups of water to bottom of Instant Pot. Add cubed sweet potatoes into a steamer basket. Drop the basket into the Instant Pot. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up move valve to venting and remove the lid.
  3. Remove the steamer basket and discard the water in the pot. 
  4. Dump the sweet potatoes into the Instant Pot liner. Mash. Stir in the butter, brown sugar, salt, vanilla, cinnamon, ginger and nutmeg. 
  5. In a bowl add the pecans and 1 Tbsp of butter. Microwave until butter is melted. Stir. Sprinkle in cinnamon sugar to taste. 
  6. Scoop some of the sweet potatoes into a bowl and top with a couple tablespoons of the pecans. Eat and enjoy!
