Forgotten Casserole

Forget about it! You can forget about doing a lot of dishes. You can forget about fussing over a simmering pot. You can forget about this dish once it’s in the pot. This is one of those easy dump and go recipes with only a handful of ingredients. It’s got lots of flavor thanks to the seasonings in the rice box. And it’s flavorful but not overpowering or spicy. Kids and adults both love this dinner.

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon
  • Boneless skinless chicken thighs–or chicken tenderloins
  • Zatarain’s creamy blackened chicken rice mix
  • Tomato sauce
  • Frozen sweet corn
  • Butter
  • Cheddar cheese–I like sharp

Steps

Add broth and half of the chicken into the Instant Pot. Sprinkle in the contents of rice package. Add the rest of the chicken on top. Add in the tomato sauce, corn and butter. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the cheese and serve.

Notes/Tips

  • Serve with roasted broccoli or green beans.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
  • Not ready to eat right away? That’s okay. Just leave the lid on until you’re ready to serve. The rice stays better this way.
  • I like using chicken thighs because they stay moist and tender. Chicken breasts would also work but they won’t be as tender.
  • Zatarain’s creamy blackened chicken rice mix is an ode to the Italian influences in New Orleans cuisine, Parmesan and Romano cheeses are blended with garlic and black pepper for a cheesy, creamy rice dish with craveable blackened flavor. You can find it next to other rices and rice mixes like Rice-a-Roni at the grocery store.

Ingredients

Scale
  • 1 1/2 cups chicken broth

  • 1 (8 oz) package Zatarain’s creamy blackened chicken rice mix

    This was soooo delicious! Could only find the Z rice mix at Publix, but I’ve made this twice now. Just followed your recipe and it was EZ and amazing. Left overs are even better!!
