Death Chicken
Today’s recipe is an adaptation from death chicken on food.com. The author states, “It gets its name from the strong Southern tradition of bringing a covered dish to families in mourning–this was the favorite of all the comfort foods brought on one such occasion. It’s from the book ‘God Save the Sweet Potato Queens’ by Jill Conner Browne.”
This creamy chicken and rice can be prepped in just a few minutes…it’s an easy dump and go recipe. There are not sautéing steps or chopping. It’s a comfort food that reminds me of my childhood. The use of chicken thighs, for me personally, is essential. They are ultra moist and tender. You can easily double this recipe to feed a crowd.
Ingredients/Substitution Ideas
- Chicken broth–or water and Better than Bouillon chicken base
- Converted rice–or long grain white rice
- Dried oregano
- Dried parsley
- Ground nutmeg
- Black pepper
- Garlic powder
- Boneless skinless chicken thighs
- Campbell’s cream of chicken and herbs soup
Steps
Pour broth into Instant Pot. Sprinkle in the rice. Sprinkle oregano, parsley, nutmeg, pepper and garlic powder on top.

Cut each chicken thigh into 4-6 pieces each. Place the chicken on top of the rice.

Spoon the cream of chicken soup over the top of the chicken. Do not stir.


Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir and serve.


Notes/Tips
- Serve with a side of roasted or steamed broccoli.
- To make this gluten free use gluten free cream of chicken soup.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
- Other recipes you can make with converted rice are dizzy chicken casserole and Spanish rice with beef.
- Can I use chicken breasts instead of thighs? Yes you can although they won’t turn out as tender. You can also use chicken tenderloins.
