Family Vacation Casserole–an easy one-pot cheeseburger-inspired Instant Pot meal with ground beef, rotini, cheddar cheese, and dill pickles.

Instant Pot Cheeseburger Pasta

Family Vacation Casserole

Today’s recipe is a perfect one to make when you’re staying with your family at a vacation house at the lake or the beach. Kids and adults like it. Plus it’s easy to double for a crowd. No standing over the grill or stove. Just throw everything in the pot and let it do it’s thing. It’s got those cheeseburger vibes and it makes great leftovers too. Enjoy!

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey, pork
  • Onion
  • Tomato paste
  • Spicy brown mustard–or Dijon mustard
  • Garlic powder
  • Kosher salt
  • Black pepper
  • Beef broth–or water and Better than Bouillon
  • Rotini pasta–or elbow macaroni
  • Tomato sauce
  • Crushed tomatoes
  • Cheddar cheese
  • Dill pickle

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the tomato paste, mustard, garlic powder, salt and pepper. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the pasta. Dump the tomato sauce and crushed tomatoes over the pasta. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir in the cheese and pickles.

Serve and enjoy!

Instant Pot Cheeseburger Pasta

Notes/Tips

  • Serve with a cucumber and tomato salad with a light dill dressing.
  • Shred your own cheese if possible. It melts creamier than pre-shredded.
  • Add in bacon bits or crumbled cooked bacon for extra cheeseburger vibes.
  • Try chopped tomatoes and shredded iceberg on top if you want a deconstructed burger feel.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Ingredients

Scale
  • 16 ounces lean ground beef
  • 1 cup diced onion
  • 2 Tbsp tomato paste
  • 2 Tbsp spicy brown mustard (or Dijon)
  • 1 tsp garlic powder
  • 3/4 tsp kosher salt
  • 1 tsp black pepper
  • 2 cups beef broth
  • 8 ounces rotini pasta
  • 1 (8 oz) can tomato sauce
  • 1 (15 oz) can crushed tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced dill pickle

Instructions
