Description

An easy one-pot cheeseburger-inspired Instant Pot meal with ground beef, rotini, cheddar cheese, and dill pickles.


Ingredients

Scale
  • 16 ounces lean ground beef
  • 1 cup diced onion
  • 2 Tbsp tomato paste
  • 2 Tbsp spicy brown mustard (or Dijon)
  • 1 tsp garlic powder
  • 3/4 tsp kosher salt
  • 1 tsp black pepper
  • 2 cups beef broth
  • 8 ounces rotini pasta
  • 1 (8 oz) can tomato sauce
  • 1 (15 oz) can crushed tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced dill pickle

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the tomato paste, mustard, garlic powder, salt and pepper. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the pasta. Dump the tomato sauce and crushed tomatoes over the pasta. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
  5. Stir in the cheese and pickles.
  6. Serve and enjoy!
