Description
An easy one-pot cheeseburger-inspired Instant Pot meal with ground beef, rotini, cheddar cheese, and dill pickles.

- 16 ounces lean ground beef
- 1 cup diced onion
- 2 Tbsp tomato paste
- 2 Tbsp spicy brown mustard (or Dijon)
- 1 tsp garlic powder
- 3/4 tsp kosher salt
- 1 tsp black pepper
- 2 cups beef broth
- 8 ounces rotini pasta
- 1 (8 oz) can tomato sauce
- 1 (15 oz) can crushed tomatoes
- 1 cup shredded cheddar cheese
- 1/2 cup diced dill pickle
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the tomato paste, mustard, garlic powder, salt and pepper.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the pasta. Dump the tomato sauce and crushed tomatoes over the pasta.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Stir in the cheese and pickles.
- Serve and enjoy!
