Fake News Chicken

Have you tried any of those meatless replacement products that are on the market today? These products are designed to mimic the taste, texture, and appearance of traditional animal-based meats while being entirely derived from plants. I’ve seen many different brands at the grocery store but I haven’t ever tried them until now. This was my first try and I actually liked it (and Greg did too!). I tried out “chik’n strips” that reminded me of stir fried bites of chicken. You could use this fake chicken for many meals like stir fry, chicken salad, tacos, quesadillas, etc.

Today I used it for bbq flatbread. The flatbread recipe is so tasty and quite easy. It only requires a 20 minute resting time of the dough and then you cook the flatbread on a griddle or in a pan on the stove. It cooks within a few minutes and then you can assemble your pizza with your favorite barbecue sauce, some cheese, chicken, tomatoes and red onion.

We all loved these pizzas! Next time I will double the dough ingredients to have leftover flatbread for another meal.

Ingredients/Substitution Ideas

  • Instant yeast
  • Honey
  • All purpose flour
  • Salt
  • Plain yogurt–full fat is best
  • Olive oil
  • Alpha plant based homestyle chik’n strips–or you can use real chicken that has been cooked and chopped or shredded
  • BBQ sauce–your favorite brand
  • Mozzarella cheese
  • Red onion
  • Fresh basil
  • Bacon crumbles–optional
  • Cherry tomatoes–or roma, grape

Steps

In a small bowl whisk the water, yeast and honey together. Set aside for 3 minutes, until bubbly. Add flour, salt or yogurt to a food processor or blender. Pulse 10 times. Add in the yeast mixture. Pulse until a ball forms.

Set the dough in a warm place for 20 minutes (I placed my dough in a oiled Instant Pot on the yogurt function, see note below).

Divide the dough into 4-6 pieces. I used a pizza cutter.

Heat a skillet or griddle to medium heat. On a floured surface, roll out each piece of dough to about ¼ inch thickness. Brush a bit of olive oil on each side of the flat breads. Cook for 2-3 minutes on each side until lightly browned. 

Preheat a lightly oiled pan over medium heat. Add Alpha Plant-Based Chicken Strips and stir fry for 6-8 minutes from frozen, or 4-6 minutes from thawed. Strips are ready when they are lightly crisped and brown.

Stir in about ¼ cup of barbecue sauce.

Spoon 2-3 Tbsp of barbecue sauce over each of the flatbread. Add toppings to each of the flatbread: chicken, ¼ cup mozzarella, 1 Tbsp red onion, 1 Tbsp basil, 2 Tbsp bacon, 5 halved cherry tomatoes.

Bake in a 400° F oven for 5 minutes, until the cheese is melted.

Notes/Tips

  • Serve with a green salad. I love the Olive Garden Italian dressing.
  • I used my 6 quart Instant Pot* for the dough. I used a USA pan* to bake the flatbread pizzas. I love these pans because you don’t have to spray with nonstick cooking spray. They work great for cookies.
  • If you have leftovers you can wrap them in foil and refrigerate for up to 5 days.

Ingredients

For the flatbread: 

  • 1/4 cup hot water
  • 2 tsp instant yeast
  • 1 Tbsp honey
  • 2 cup all purpose flour
  • 1 tsp salt
  • 3/4 cup plain yogurt (full fat is best)
  • Olive oil

Toppings:

  • 1 (8 oz) package Alpha plant based homestyle chik’n strips
  • BBQ sauce
  • 1 cup grated mozzarella cheese
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped fresh basil
  • 1/2 cup cooked and crumbled bacon (optional)
  • 10 cherry tomatoes, halved

Notes

To use your Instant Pot as a warm place for yeast breads to rest/raise: Oil the pot so that the dough doesn’t stick. Place the dough in the bottom of your pot. Then select the yogurt button. Use the adjust button to cycle through until the light is on the “less.” My pot says 24 hours on the display. Cover and let the dough raise for 20 minutes.

    Like the others, ZERO desire to use FAKE meats. I prefer what God created vs what the people who want to reduce the population by 95% conjure up.

    I wouldn’t mind trying this with real chicken, but you could not PAY me to eat fake meat of any kind.
