Everyone Loves Casserole
This is one of those recipes that you’ve probably had a variation of in your life. The basic ingredients are chicken, rice and a cream of soup. I decided to step the flavor up a bit by adding in a few seasonings. I also made this in the slow cooker instead of the oven (although you could certainly cook this in the oven in a baking dish for about 40 minutes at 350° F). Recipe adapted from Food.com.
Ingredients/Substitution Ideas
- Cream of mushroom soup–or cream of chicken soup
- Better than Bouillon chicken base
- Water–or chicken broth (if you use chicken broth don’t use the bouillon)
- Smoked paprika
- Poultry seasoning
- Black pepper
- Onion powder
- Garlic powder
- Converted rice–or long grain white rice, jasmine rice
- Bone-in, skin removed chicken breasts–or boneless chicken thighs
Steps
Add the cream of mushroom soup, bouillon, water, paprika, poultry seasoning, black pepper, onion powder and garlic powder into slow cooker. Whisk together well.

Stir in the rice.

Nestle the chicken into the crock. Lightly salt and pepper the chicken.

Cover and cook on low for 3-4 hours, or until chicken is cooked through. Remember each slow cooker cooks differently. Older slow cookers tend to take longer to cook.

Serve chicken and rice with broccoli.

Notes/Tips
- Serve with a side of broccoli that is steamed or roasted. The original recipe has the broccoli mixed into the meal but my family is not a fan of broccoli cooked into casseroles so I chose to serve it on the side. I also think the broccoli would be overcooked if it was cooked with everything else.
- I used a 6 quart Ninja slow cooker.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
