Everyone Loves Beef Casserole–an Instant Pot dinner with beef, rice, cabbage, and a touch of BBQ flavor. It’s super easy and cheesy comfort food in a bowl.

Everyone Loves Beef Casserole

This beefy rice bowl has a fun hodge podge of ingredients. You’ll start with the basics…ground beef, onion, and seasonings. The beefy mushroom soup is like a shortcut to a meaty mushroom gravy. The cabbage melts into everything and adds a nice texture without screaming “hey, I’m cabbage!” so even picky eaters won’t notice it. The corn adds little pops of sweetness. Finally the melty cheese just finishes everything off. I made a smaller version of this recipe (for about 3 people) but you can easily double the recipe if you’re serving a larger group.

Ingredients/Substitution Ideas

  • Lean ground beef
  • Onion
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Beef broth
  • Converted rice–or long grain white
  • Cabbage
  • Frozen sweet corn
  • Campbell’s Beefy Mushroom Soup–or golden mushroom soup
  • BBQ sauce
  • Cheddar cheese–or another type you like

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion, salt, pepper and garlic powder. Brown for 5 minutes. Drain off excess grease.

Pour in broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the rice.

Then dump in the cabbage, corn, soup and BBQ sauce. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes. Move valve to venting and remove the lid. 

Stir well. Sprinkle cheese on top and let it melt. Serve and enjoy!

Notes/Tips

  • Serve with a green salad or fresh raw veggies and dip.
  • Use converted rice (like Uncle Ben’s) for the best texture.
  • Don’t stir before pressure cooking. Layering helps prevent the burn notice.
  • Make it spicy with a dash of hot sauce or crushed red pepper flakes.
  • I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

Scale
  • 1/2 pound lean ground beef
  • 1/2 cup diced onion
  • 1/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 cup beef broth
  • 3/4 cup converted rice
  • 2 cups shredded cabbage
  • 1/2 cup frozen sweet corn
  • 1 (10.5 oz) can Campbell’s Beefy Mushroom Soup
  • 1 Tbsp BBQ sauce
  • 1/2 cup shredded cheddar cheese

Instructions

Notes

This recipe is easy to double. Double all ingredients and keep cooking time the same.

    What a deliciously easy meal! I used Brown rice and cooked it for 22 minutes. I was a little worried about the cabbage cooking on high pressure for 22min but it did great! I did omit the corn because I didn’t have any but followed everything else to a T! the BBQ sauce gave it a nice twist. this is definitely a keeper recipe….thank you, Karen!

    I haven’t made this yet but am giving it 5 stars because I can tell it will be delicious just by reading the recipe! 😋
    Campbell’s “Beefy Mushroom” soup is not sold where I live…what could I substitute for it???

      yes regular rice would be fine and you can keep the same cooking time
