Edna Miller’s Soup
Today’s recipe is adapted from Amish 365, “This Amish one-pot chicken stew is one of these hearty recipes sent to me from an Amish cook named Edna Miller in Kentucky.” I’ve changed up the recipe to cook it in the Instant Pot or slow cooker. Chicken soup is so simple but it’s a classic for a reason. This version uses potatoes as well as pasta. It’s a perfect meal for a chilly fall day. FALL IS HERE! YAY!
Ingredients/Substitution Ideas
- Olive oil–or canola, vegetable
- Onion–or shallot
- Celery
- Chicken broth–or water and Better than Bouillon chicken base
- Boneless skinless chicken thighs or breasts–or 2-3 cups of rotisserie chicken
- Bowtie pasta
- Carrots
- Russet potatoes–or red, yukon gold
- Kosher salt
- Black pepper
Steps
Turn Instant Pot to sauté setting. When display says HOT add in the oil and swirl around. Add in the onion and celery and sauté for 4 minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Keep the Instant Pot on the sauté setting so the broth can start heating up while you prepare other ingredients.

Add in the chicken, pasta, carrots, potatoes, salt and pepper. Cancel off the sauté setting.


Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP button to 3 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir. Ladle into bowls and serve.


Notes/Tips
- Serve with dinner rolls, cornbread or biscuits.
- If you want a creamier soup, stir in a splash of half and half or cream at the end.
- If your Instant Pot doesn’t have a soup button just cook on low pressure for 3 minutes with a 10 minute natural pressure release.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients
- 1 Tbsp olive oil
- 1 small onion, diced
- 1 rib of celery, sliced
- 8 cups chicken broth
- 20 oz boneless skinless chicken thighs or breasts, cut into bite size pieces
- 3 oz bowtie pasta
- 2 carrots, peeled and sliced
- 2 medium Russet potatoes, peeled and cut into 1/2 inch cubes
- 1 tsp kosher salt
- 1 tsp black pepper

Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the oil and swirl around. Add in the onion and celery and sauté for 4 minutes. Add to the slow cooker.
- Add in all ingredients except pasta.
- Cover and cook on low for 3-4 hours. Add in the pasta and cover. Cook on high for 30 minutes, until pasta is cooked through.
- Ladle into bowls and serve.
