Description

Flavorful Instant Pot dinner made with seasoned ground lamb, basmati rice, zucchini, feta and Greek yogurt for an easy Mediterranean-inspired meal.


Ingredients

  • 16 oz ground lamb
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 1/4 tsp dried dill
  • 1 1/2 cups chicken broth
  • 1 cup basmati rice
  • 1 small zucchini, shredded
  • 1/2 cup diced tomatoes
  • 1/2 cup feta cheese
  • 1/2 cup plain greek yogurt

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the lamb and break it up. Add in the onion. Brown for 5 minutes. Stir in the garlic, salt, pepper, garlic powder, oregano, basil and dill.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the rice and press gently to submerge. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  5. Stir in the zucchini, tomatoes, feta and greek yogurt. Salt and pepper to taste. Serve and enjoy!
