Description
Flavorful Instant Pot dinner made with seasoned ground lamb, basmati rice, zucchini, feta and Greek yogurt for an easy Mediterranean-inspired meal.

- 16 oz ground lamb
- 1 small onion, diced
- 4 garlic cloves, minced
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1/4 tsp dried oregano
- 1/4 tsp dried basil
- 1/4 tsp dried dill
- 1 1/2 cups chicken broth
- 1 cup basmati rice
- 1 small zucchini, shredded
- 1/2 cup diced tomatoes
- 1/2 cup feta cheese
- 1/2 cup plain greek yogurt
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the lamb and break it up. Add in the onion. Brown for 5 minutes. Stir in the garlic, salt, pepper, garlic powder, oregano, basil and dill.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rice and press gently to submerge.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir in the zucchini, tomatoes, feta and greek yogurt. Salt and pepper to taste. Serve and enjoy!
