Easy Club Chicken
If you have an air fryer* this is a fast and easy and TASTY recipe you definitely need to try. The chicken gets so tender and juicy and the only thing I wasn’t sad about was that there wasn’t enough! My whole family agreed.
You only need cracker crumbs, chicken, Italian dressing mix and butter to make this recipe. The chicken tenders cook quickly in your air fryer (just 10 minutes total). And you get the satisfaction of eating crispy chicken without the deep frying, oil and calories.
Ingredients/Substitution Ideas
- Club crackers–you could also use Ritz crackers
- Italian salad dressing mix packet–store brand is what I use but Good Seasons brand is good too. You can also use a packet of ranch dressing mix.
- Chicken tenderloins–fresh
- Butter–or you can use 2-3 eggs that have been scrambled to dip the chicken in
Steps
- Crush the crackers into crumbs (I used a blender and pulsed a few times).
- Place the cracker crumbs into a bowl. Stir the Italian salad dressing mix in with the crumbs.
- In a separate bowl add the melted butter.
- Pat each piece of chicken dry with a paper towel.
- Dip each chicken piece into the butter and then roll in the cracker crumbs (really press the chicken into the crumbs so that each piece of chicken is fully coated). Place each piece of chicken into bottom of air fryer. Try not to overlap the chicken. Depending on the size of your air fryer you may need to work in batches.
- Air fry for 5 minutes at 400 degrees and then flip chicken over and air fry for 5 more minutes.
- Serve chicken with any dipping sauce you like (ketchup, barbecue, honey mustard, ranch, etc).
Notes/Tips
- Serve with mashed potatoes or a rice pilaf and broccoli or asparagus.
- I used my Instant Vortex* air fryer.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months. Reheat using your air fryer so that the crumb topping remains crispy.

- 1 sleeve of club crackers (36 crackers)
- 1 (1 oz) packet Italian salad dressing mix
- 1 1/2 to 1 3/4 pounds chicken tenderloins
- 6 Tbsp melted butter
Instructions
- Crush the crackers into crumbs (I used a blender and pulsed a few times).

I have an air fryer setting in my range oven [which is a large cavity rather than a small space] Should this and any air fryer recipe be altered and if so….how?
I am unsure on the oven and how that would work. I would just watch it. I bet it will take a few minutes longer.
