Fast and Easy Dolly Parton's Chicken Casserole

Dolly’s Casserole

With a tiny list of ingredients and only 10 minutes of prep you can enjoy a comforting chicken and rice casserole for dinner tonight. This is one of those recipes that just reminds me of Grandma’s cooking. Try adding in a bag of frozen vegetables to round it out. Recipe adapted from Dolly Parton’s 5 Ingredient Casserole.

Ingredients/Substitution Ideas

  • Rotisserie chicken–or any cooked chicken chopped up
  • Cream of chicken and herbs soup–campbell’s brand
  • Sour cream
  • Converted or long grain white rice
  • Ritz crackers
  • Cheddar cheese–or colby, mexican blend

Steps

Heat oven to 350° F.

In a large bowl stir together all ingredients. 

Spray a 9×9 inch baking dish with non-stick cooking spray. Spread the chicken mixture into the pan.

Bake for 40 minutes. Serve and enjoy!

5 ingredient Dolly Parton's Casserole

Notes/Tips

  • Serve with steamed or roasted broccoli. Alternately, you can stir a package of frozen broccoli in with the chicken mixture and make this a broccoli chicken casserole.
  • I love using the rotisserie chicken from Costco for a recipe like this one.
  • Instead of the water and rice try adding in 3-4 cups of frozen hashbrowns to make this a hashbrown chicken casserole.
  • For a little something extra add in a half cup of diced ham.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

    Terrible recipe. Rice was barely cooked when it came out of the oven. We tried cooking it some more for almost an hour and it still wasn’t cooked. We ended up dumping the whole thing, complete waste of time and food!

    Tried making this but the rice wasn’t fully cooked after 40 minutes. I did make it with the frozen broccoli suggestion so not sure if I should have modified the cook time. I would suggest covering with foil when baking if I were to make this again and maybe increase to cook time.

    Do I cover the pan when baking with foil or leave as is?

      I didn’t cover with foil. I don’t think there is anything wrong with that but I didn’t
