Slow Cooker Disneyland Soup

Disneyland Soup

Let me tell you about this beef soup that’s made in the slow cooker. First off it’s served in a bread bowl that has Mickey ears…adorable! I’m a bread lover so any soup served in a bread bowl is a win in my book. Second, it’s like a warm hug in the form of a stew. It’s so comforting. It’s got tender bites of beef, chunks of carrots, potatoes and mushrooms. It’s basically Disneyland magic that you can make at home. Perfect for a chilly, dark November night.

Ingredients/Substitution Ideas

  • Canola oil–or olive oil, vegetable oil
  • Onion–or a shallot
  • Celery
  • Mushrooms
  • Garlic–I used fresh garlic and used a garlic press. You can also used jarred minced garlic.
  • Flour
  • Beef broth–or water and Better than Bouillon beef base
  • Carrots–or baby carrots
  • Seasoned salt–or garlic salt
  • Black pepper
  • Paprika
  • Worcestershire sauce–or steak sauce
  • Beef stew meat–or roast cut into cubes
  • Potatoes–I used Russet potatoes. You can also use yukon gold or red potatoes or even sweet potatoes.
  • Red wine vinegar–or white wine vinegar, balsamic
  • Frozen peas–optional…I didn’t put them in
  • Bread bowls–I used sourdough bread bowls

Steps

Heat a pan over medium high heat (I have a slow cooker that has a stovetop function so I just do this step right in my slow cooker). Add in the oil, onion, celery and mushrooms. Saute for 3 minutes. Add in the garlic and saute for 30 seconds.

Stir in the flour to coat. Transfer the mixture to the slow cooker.

Pour in the broth and stir. Stir in the carrots, seasoned salt, pepper, paprika, Worcestershire, stew meat and potatoes. (My stew meat was frozen, once it got warmed enough I broke it apart with a spoon).

Cover slow cooker and cook on high for 3 hours or on low for 5 hours. 

Stir in a splash of red wine vinegar. Salt to taste, if needed. If desired stir in a cup of peas.

Hollow out sourdough bread bowl. Use the hollowed out portion and a couple of toothpicks to create mickey ears on the bread bowl.

Ladle soup into bread bowl. Enjoy!

Notes/Tips

  • If not serving in a bread bowl serve alongside some crusty bread or garlic toast.
  • Have people in your house that don’t like peas? Add the peas to each individual bowl of those who care for them.
  • Want to make this even better? Try browning the stew meat in some oil before sautéing the onions.
  • Love tomato? Try adding in a tablespoon of tomato paste.
  • This recipe can be gluten-free. Leave out the flour. Instead use 2 Tbsp of cornstarch mixed with the broth until smooth. Also use a gluten-free Worcestershire sauce.
  • This recipe is dairy free.
  • I used a 6 quart Ninja slow cooker. I don’t think they sell my particular model anymore. It’s sort of like this one.* I like it because you can use the stovetop function to saute onions, brown meats, etc. before slow cooking.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
  • Other recipes you can make with carrots are slow cooker orange glazed carrots and slow cooker broccoli cheddar soup.

Ingredients

  • 1 Tbsp canola oil
  • 1 cup diced onion
  • 1 rib of celery, sliced or diced
  • 4 ounces mushrooms, sliced
  • 1 Tbsp minced garlic
  • 1/4 cup flour
  • 3 cups beef broth
  • 2 carrots, peeled and sliced
  • 1 tsp seasoned salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 Tbsp Worcestershire sauce
  • 20 ounces beef stew meat
  • 12 ounces potatoes, peeled and cubed
  • Splash of red wine vinegar
  • 1 cup frozen peas, optional
  • Sourdough bread bowls, if desired
