Disagreement Soup
With only 191 calories per serving and 20 grams of protein this soup is a winner for dinner or lunch. It has plenty of veggies (onion, celery, carrot, cabbage, green beans, bell pepper and tomatoes) and a splash of lemon juice to give it a citrus twist. You can make this in the Instant Pot or Crockpot and the leftovers freeze well too. Greg and I were talking about what to name the soup and he said I should name it Number 2 soup because this soup will get everything going digestion wise, if you know what I mean. I told him no way, that’s gross and I’m not naming it that. Hence we named it disagreement soup lol. Fun times at the Petersen house 😉. This is the perfect meal to make today after all the unhealthy food you may have eaten for the Superbowl yesterday!
Ingredients/Substitution Ideas
- Olive oil–or canola, vegetable
- Onion
- Celery
- Chicken broth–or water and Better than Bouillon chicken base or vegetable base
- Carrots
- Garlic
- Cabbage
- Green beans–fresh or frozen
- Yellow bell pepper–or red, green, orange
- Diced tomatoes–or crushed, stewed
- Turmeric
- Poultry seasoning
- Dried parsley
- Kosher salt
- Black pepper
- Ginger root
- Chicken breast–or thighs
- Lemon juice
Steps
Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the onion and celery and saute for 4 minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Add in the remaining ingredients except for the lemon juice.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 10 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Remove the chicken and chop or shred. Stir it back into the pot.

Stir in the lemon juice. Salt and pepper to taste.
Ladle into bowls and serve.

Notes/Tips
- Serve with garlic bread, breadsticks, French bread or dinner rolls.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- This recipe is gluten free and dairy free.
- Try adding in a half cup of rice to bulk this soup up a bit.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Ingredients
- 1 Tbsp olive oil
- 1 cup diced onion
- 1 rib of celery, sliced
- 6 cups chicken broth
- 2 carrots, peeled and sliced
- 2 cloves of garlic, minced
- 2 cups shredded cabbage
- 2 cups fresh green beans
- 1/2 of a yellow bell pepper, diced
- 1 (14.5 oz) can diced tomatoes
- 1/2 tsp turmeric
- 1/2 tsp poultry seasoning
- 1 Tbsp dried parsley
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 2 tsp grated ginger root
- Optional: one chicken breasts (about 12 ounces)
- 2 Tbsp fresh lemon juice

- Heat a pan over medium high heat. Add in the oil and swirl it around. Add in the onion and celery and saute for 4 minutes. Add to the slow cooker.
- Add in the remaining ingredients except for the lemon juice.
- Cover and cook on low for 4 hours.
- Remove the chicken and chop or shred. Stir it back into the slow cooker.
- Stir in the lemon juice. Salt and pepper to taste.
- Ladle into bowls and serve.
