Description
An easy slow cooker chicken and potato recipe made with tender chicken thighs, Yukon gold potatoes, mushrooms, garlic, balsamic vinegar and a creamy savory sauce.

- 4 oz quartered mushrooms
- 20 oz yukon gold potatoes, cut into 1 inch cubes
- 16 oz boneless skinless chicken thighs, cut into 2 inch chunks
- 1 tsp kosher salt
- 1 tsp black pepper
- 2 Tbsp dried onion
- 4 garlic cloves, minced
- 1 Tbsp cornstarch
- 1 Tbsp olive oil
- 2 Tbsp tomato paste
- 1 Tbsp worcestershire sauce
- 1 Tbsp balsamic vinegar
- 1/2 cup water
- 1 tsp Better than Bouillon chicken base
- 1/4 cup heavy cream or half and half
Instructions
- Add mushrooms, potatoes, chicken, salt, pepper, onion, garlic, cornstarch, olive oil, tomato paste, Worcestershire sauce, vinegar, water and better than bouillon into slow cooker and stir well.
- Cover and cook on low for 3 hours.
- Stir in cream, Salt to taste. Serve and enjoy!
