Delta Casserole–an Instant Pot rice dish featuring mushrooms, beef consommé and rice. It’s so simple and ready in under 30 minutes.

Delta Casserole

This easy Instant Pot rice dish is savory and quite easy to put together. It’s versatile in that you can serve it as a side dish or add cooked ground beef or beans to make it a full meal. It’s easy to double to serve a crowd. The savory beef consommé is the secret ingredient to make it flavorful. Enjoy!

Ingredients/Substitution Ideas

  • Butter
  • Onion–or shallot
  • Celery
  • Mushrooms
  • Beef consomme–I used Campbell’s brand
  • Water
  • Converted rice–or long grain white rice
  • Black pepper
  • Kosher salt

Steps

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onion, celery and mushrooms and saute for 5 minutes. 

Pour in the consomme and water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the rice, pepper and salt.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir. Serve and enjoy! Top with a bit of parmesan cheese, if desired.

Notes/Tips

  • Serve with a side salad, some garlic green beans or roasted broccoli.
  • What is converted/parboiled rice? Don’t confuse converted rice (or sometimes it is called parboiled rice) with pre-cooked or minute rice. Parboiled rice has been processed in its husk by soaking, steaming, and drying. As a result, all the nutrients from the husk are absorbed into the grain before it’s removed. The starch content alters in the process, making cooked parboiled rice less sticky than regular white rice. The rice kernels aren’t clumpy and glued together instead they are more separated. I found a bag of parboiled rice at Walmart next to the normal long grain white rice. Sometimes I buy it at Winco in the bulk section. I have also found it in the orange box (Ben’s brand) next to other rices.
  • This recipe can be gluten free if you use gluten free consomme.
  • Try adding in half of a diced green pepper.
  • I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Ingredients

Scale
  • 3 Tbsp butter
  • 1/2 cup diced onion
  • 1 rib of celery, sliced
  • 4 ounces sliced mushrooms
  • 1 (10.5 oz) can beef consomme
  • 1/4 cup water
  • 1 cup converted rice or long grain white rice
  • 1/2 tsp black pepper
  • 1/4 tsp kosher salt

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onion, celery and mushrooms and saute for 5 minutes.

    I only have a slow cooker… I do not have an Insta pot… I have asked before to not send any Insta pot recipes to me. Just a slow cooker or you know like the regular on the stove type recipes… I would really appreciate that. Thank you so much!
