Description

An Instant Pot rice dish featuring mushrooms, beef consommé and rice. It’s so simple and ready in under 30 minutes.


Ingredients

Scale
  • 3 Tbsp butter
  • 1/2 cup diced onion
  • 1 rib of celery, sliced
  • 4 ounces sliced mushrooms
  • 1 (10.5 oz) can beef consomme
  • 1/4 cup water
  • 1 cup converted rice or long grain white rice
  • 1/2 tsp black pepper
  • 1/4 tsp kosher salt

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onion, celery and mushrooms and saute for 5 minutes. 
  2. Pour in the consomme and water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the rice, pepper and salt.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  5. Stir. Serve and enjoy! Top with a bit of parmesan cheese, if desired.
