Description
An Instant Pot rice dish featuring mushrooms, beef consommé and rice. It’s so simple and ready in under 30 minutes.
Ingredients

- 3 Tbsp butter
- 1/2 cup diced onion
- 1 rib of celery, sliced
- 4 ounces sliced mushrooms
- 1 (10.5 oz) can beef consomme
- 1/4 cup water
- 1 cup converted rice or long grain white rice
- 1/2 tsp black pepper
- 1/4 tsp kosher salt
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onion, celery and mushrooms and saute for 5 minutes.
- Pour in the consomme and water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rice, pepper and salt.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir. Serve and enjoy! Top with a bit of parmesan cheese, if desired.
