Day 211: Greek Chicken and Potatoes

Serves 4-6

4-6 potatoes, quartered
2-3 lbs chicken pieces
2 large onions, quartered
1 whole bulb garlic, minced
3 tsp dried oregano
1 tsp salt
1/2 tsp pepper
1 tbsp olive oil

Place potatoes in bottom of slow cooker. Add chicken, onions, and garlic. Sprinkle with seasonings. Top with oil. Cover. Cook on High 5-6 hours, or on Low 9-10 hours.

I served this when my sister and brother-in-law were over. We all enjoyed it but agreed that there was just something missing. We couldn’t figure out what it was. Some spice? Maybe some balsamic vinegar? Despite the missing ingredient, it was all eaten. Make sure to give the potatoes enough time to cook. If you are running low on time, cut the potatoes into smaller chunks. 3 stars.

    The missing ingredient would be lemon juice. I have a recipe similar to this with lemon juice and red potatoes instead of regular potatoes. It's divine!!

    I made this tonight for dinner and added some Kraft's Fat Free Ceaser Italian Dressing and it was delicious! We didn't find anything lacking, even my 1 1/2 year old ate it all! Thanks for posting!

    Hmm, this looks good. I wonder if putting a can of cream of mushroom soup in there would help the flavor?? Maybe some cheese sprinkled on top for the last few minutes of cooking time?? I will have to try this.

    There is a "greek" seasoning at the store with the other spices, I've also found it at the $1 store. It would probaly liven it up a bit. I'm trying it tomorrow, I'll let you know. Thanks for all the great ideas aned inspiration!
