Description

This cozy soup has tender potatoes, mixed vegetables, tomatoes and savory ground beef and can be made in the Instant Pot or slow cooker.


Ingredients

Scale
  • 16 oz lean ground beef
  • 1 cup diced onion
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1/4 tsp smoked paprika
  • 4 cups beef broth
  • 2 tsp Worcestershire sauce
  • 1 (28 oz) can crushed tomatoes
  • 20 oz red potatoes, cubed
  • 2 cups frozen mixed vegetables

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, thyme and smoked paprika.
  2. Pour in the broth and scrape the bottom of pot so that nothing is sticking.
  3. Add in Worcestershire, crushed tomatoes and the potatoes.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP (or low pressure) button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  5. Stir in the veggies and a pinch of salt, if needed.
  6. Ladle into bowls and serve.

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, thyme and smoked paprika. Transfer to the slow cooker.
  2. Stir in the broth, Worcestershire, crushed tomatoes and the potatoes.
  3. Cover and cook on low for 4-6 hours.
  4. Stir in the veggies and a pinch of salt, if needed.
  5. Ladle into bowls and serve.
