Description

A super fast and easy dump and go soup with chicken, tomatoes, vegetables and rice. Make it in the Instant Pot or slow cooker. 


Ingredients

Scale
  • 5 cups water
  • 1 packet onion soup mix
  • 2 cups rotisserie chicken
  • 1 (14.5 oz) can petite diced tomatoes
  • 1/3 cup converted rice
  • 1 (12 oz) package frozen vegetables (I used a broccoli, cauliflower, carrot blend)
  • 1 Tbsp red wine vinegar
  • Salt and pepper

Instructions

Instant Pot Instructions:

  1. Add water, onion soup mix, chicken, tomatoes and rice into Instant Pot. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the soup button to 5 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  3. Meanwhile, cook the veggies according to package directions (I steamed mine in the microwave). Stir the veggies into the pot.
  4. Add in the vinegar. Add salt and pepper to taste. 
  5. Ladle into bowls and serve. Top with a bit of parmesan cheese.

Slow Cooker Instructions:

  1. Add water, onion soup mix, chicken, tomatoes and rice into slow cooker. 
  2. Cover and cook on low for 2 hours. Add in the vegetables and cook for another hour. 
  3. Add in the vinegar. Add salt and pepper to taste. 
  4. Ladle into bowls and serve. Top with a bit of parmesan cheese.
