Description
A super fast and easy dump and go soup with chicken, tomatoes, vegetables and rice. Make it in the Instant Pot or slow cooker.
Ingredients

- 5 cups water
- 1 packet onion soup mix
- 2 cups rotisserie chicken
- 1 (14.5 oz) can petite diced tomatoes
- 1/3 cup converted rice
- 1 (12 oz) package frozen vegetables (I used a broccoli, cauliflower, carrot blend)
- 1 Tbsp red wine vinegar
- Salt and pepper
Instructions
Instant Pot Instructions:
- Add water, onion soup mix, chicken, tomatoes and rice into Instant Pot.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the soup button to 5 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Meanwhile, cook the veggies according to package directions (I steamed mine in the microwave). Stir the veggies into the pot.
- Add in the vinegar. Add salt and pepper to taste.
- Ladle into bowls and serve. Top with a bit of parmesan cheese.
Slow Cooker Instructions:
- Add water, onion soup mix, chicken, tomatoes and rice into slow cooker.
- Cover and cook on low for 2 hours. Add in the vegetables and cook for another hour.
- Add in the vinegar. Add salt and pepper to taste.
- Ladle into bowls and serve. Top with a bit of parmesan cheese.
