Island Park Soup–an easy dump and go Instant Pot or slow cooker recipe with tender bites of pork, black eyed peas, corn, tomatoes and finished off with lime juice.

Instant Pot Pork Stew

Island Park Soup

Greg and I decided to head up to the cabin in Island Park at the very last minute giving me zero time to meal prep and think about what to make while I was there. I knew I had a few things in the cupboards and we stopped by the little grocery store and picked up a couple of items too. I put together this soup that turned out so good. First, off it’s a dump and go recipe…so you prepare it in just a few minutes. Second, the pork got ultra tender and was a fun change from the normal ground beef or chicken. Finally, it was the perfect meal for a cold, snowy day. I did have some Fritos and sour cream so I put that on top of the soup and it was hearty and delicious.

Ingredients/Substitution Ideas

  • Pork stew meat–I used a package of Willamette Valley hatch green chile seasoned pork stew meat. You can also cut up a pork roast into cubes.
  • Chicken broth–or water and Better than Bouillon chicken base
  • Corn–or frozen corn
  • Black eyed peas–or black beans, kidney beans, pinto beans
  • Converted rice–pr long grain, jasmine, basmati
  • Petite diced tomatoes–or Rotel, crushed tomatoes, stewed tomatoes
  • Tomato sauce
  • Black pepper
  • Garlic powder
  • Onion powder
  • Cumin
  • Chili powder
  • Lime juice–fresh is best

Steps

Add all ingredients except lime juice into Instant Pot. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the lime juice. Taste test and add salt to taste, if needed.

Ladle into bowls and serve topped with Fritos and a dollop of sour cream.

Notes/Tips

  • Serve with cornbread or a side salad.
  • If you’re not using seasoned pork you may want to add in a can of green chiles and season the meat a little before adding it into the pot.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • This recipe is gluten free and dairy free.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

An easy dump and go Instant Pot or slow cooker recipe with tender bites of pork, black eyed peas, corn, tomatoes and finished off with lime juice. 


Ingredients

Scale
  • 22 ounces pork stew meat (I used a package of Willamette Valley hatch green chile seasoned pork stew meat)
  • 3 cups chicken broth
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can black eyed peas, rinsed and drained
  • 1/3 cup converted rice
  • 1 (14.5 ounces) can petite diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 Tbsp lime juice

Instructions

Instant Pot Instructions:

  1. Add all ingredients except lime juice into Instant Pot. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  3. Stir in the lime juice. Taste test and add salt to taste, if needed.
  4. Ladle into bowls and serve topped with Fritos and a dollop of sour cream. 

Slow Cooker Instructions:

  1. Add all ingredients except lime juice into slow cooker. 
  2. Cover and cook on low for 3-4 hours.
  3. Stir in the lime juice. Taste test and add salt to taste, if needed.
  4. Ladle into bowls and serve topped with Fritos and a dollop of sour cream. 

Notes

If you’re not using seasoned pork you may want to add in a can of green chiles and season the meat a little before adding it into the pot.

      Great question! I’d season plain pork with salt, pepper, garlic powder, onion powder, cumin, and a little chili powder to mimic that flavor.

    Very, very tasty and easy to prepare. I browned the pork cubes first as usual, and used a can of Del Monte’s Mexican Style Street Corn. It’s pricier than other canned corn, but I use it now in all recipes that need corn and are of an Hispanic bent. The juices are worth using as part of a substitute in any of those Latino oriented recipes that call for water or broth. Highly recommended.
