Country Fair Casserole

Country Fair Casserole

Today’s recipe is a perfect one pot weeknight dinner. You get tender beef, pasta, and veggies all coated in a creamy, savory sauce. It’s filling, and super easy to make…even when you’re tired and just want dinner to make itself. Greg took this one down in no time! (This recipe is adapted from Country Fair Casserole on Cooks.com).

Ingredients/Substitution Ideas

  • Lean ground beef–or lean ground turkey
  • Onion
  • Mushrooms
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Worcestershire sauce
  • Beef broth
  • Elbow macaroni–or another short cut pasta
  • Frozen asparagus–or green beans, peas
  • Sour cream

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion and mushrooms. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder and Worcestershire sauce.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the macaroni and press to submerge most of it.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Warm frozen vegetable in the microwave and then stir it and the sour cream into the pot.

Salt and pepper to taste.

Serve and enjoy!

Notes/Tips

  • Serve with roasted carrots and garlic toast.
  • Microwave the frozen veggies while the pasta is cooking so they’re ready to stir in right away.
  • Use cream cheese or plain Greek yogurt instead of sour cream for a slightly different flavor or protein boost.
  • Swap elbow macaroni for rotini, penne, or shells if preferred
  • Add a handful of shredded cheddar or parmesan at the end for extra richness.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
  • Other recipes you can make with sour cream are Mississippi Mud Casserole and Instant Pot Monterey Spaghetti.
