Chicken Osso Bucco
This tender chicken with the yummiest sauce is so easy to make in the slow cooker. Greg and I ate it until it was gone. It’s a dump and go recipe and takes just a few minutes to prepare. You may want to double the sauce and serve it over some mashed potatoes to complete the meal. (This recipe is adapted from Chicken Thigh Osso Bucco on Dinner Then Dessert).
Ingredients/Substitution Ideas
- Chicken broth–or water and Better than Bouillon chicken base
- White wine vinegar–or red wine vinegar
- Dried rosemary
- Dried ground thyme
- Tomato paste
- Garlic cloves–or jarred minced garlic
- Carrots
- Onion–shallots
- Cornstarch
- Boneless skinless chicken thighs–fresh or frozen
- Kosher salt
- Black pepper
Steps
Add broth, vinegar, rosemary, thyme, tomato paste, garlic, carrots and onion to slow cooker and stir.

In a small bowl stir the cornstarch and water together until smooth. Stir the mixture into the slow cooker.

Nestle the chicken into the slow cooker. Sprinkle the chicken with the salt and pepper.

Cover slow cooker and cook on low for 4-6 hours or on high for 2-3 hours.


Serve chicken with the sauce and carrots and enjoy!

Notes/Tips
- Serve over mashed potatoes, rice, or cauliflower mash.
- The sauce is so yummy, you may want to double it.
- Add mushrooms, celery, or baby potatoes if you’d like to stretch the meal further. For extra color and flavor, stir in a handful of frozen peas during the last 15 minutes of cooking.
- I used a 6 quart CrockPot. If your slow cooker tends to cook hot, start checking for doneness on the earlier end of the cooking range.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days. This recipe freezes well. Cool completely and freeze in airtight containers for up to 3 months.
