Description
An easy slow cooker recipe with tender chicken thighs, carrots and a tomato herb sauce.
Ingredients

- 1 cup chicken broth
- 1 Tbsp white wine vinegar
- 1/2 tsp dried rosemary
- 1/2 tsp dried ground thyme
- 1 Tbsp tomato paste
- 2 garlic cloves, minced
- 2 carrots, peeled and cut into 1 inch chunks
- 1 small onion, very thinly sliced
- 1 Tbsp cornstarch + 1 Tbsp cold water
- 4 boneless skinless chicken thighs (fresh or frozen)
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Add broth, vinegar, rosemary, thyme, tomato paste, garlic, carrots and onion to slow cooker and stir.
- In a small bowl stir the cornstarch and water together until smooth. Stir the mixture into the slow cooker.
- Nestle the chicken into the slow cooker. Sprinkle the chicken with the salt and pepper.
- Cover slow cooker and cook on low for 4-6 hours or on high for 2-3 hours.
- Serve chicken with the sauce and carrots and enjoy!
