Description

An easy slow cooker recipe with tender chicken thighs, carrots and a tomato herb sauce.


Ingredients

Scale
  • 1 cup chicken broth
  • 1 Tbsp white wine vinegar
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried ground thyme
  • 1 Tbsp tomato paste
  • 2 garlic cloves, minced
  • 2 carrots, peeled and cut into 1 inch chunks
  • 1 small onion, very thinly sliced
  • 1 Tbsp cornstarch + 1 Tbsp cold water
  • 4 boneless skinless chicken thighs (fresh or frozen)
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. Add broth, vinegar, rosemary, thyme, tomato paste, garlic, carrots and onion to slow cooker and stir. 
  2. In a small bowl stir the cornstarch and water together until smooth. Stir the mixture into the slow cooker. 
  3. Nestle the chicken into the slow cooker. Sprinkle the chicken with the salt and pepper.
  4. Cover slow cooker and cook on low for 4-6 hours or on high for 2-3 hours.
  5. Serve chicken with the sauce and carrots and enjoy!
