Description
Instant Pot cilantro lime rice with chicken and sweet corn. An easy dump and go recipe.
Ingredients

- 2 cups water
- 2 boneless skinless chicken thighs, cut into cubes
- 1 (6.9 oz) box Zatarain’s cilantro lime rice
- 1 cup frozen sweet corn
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup diced cilantro
Instructions
- Pour water into bottom of Instant Pot. Add in the chicken, sprinkle in the rice and dump corn on top.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minute. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir in the cheese and sour cream.
- Serve topped with a bit of cilantro.
