Description

Instant Pot cilantro lime rice with chicken and sweet corn. An easy dump and go recipe.


Ingredients

Scale
  • 2 cups water
  • 2 boneless skinless chicken thighs, cut into cubes
  • 1 (6.9 oz) box Zatarain’s cilantro lime rice
  • 1 cup frozen sweet corn
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup diced cilantro

Instructions

  1. Pour water into bottom of Instant Pot. Add in the chicken, sprinkle in the rice and dump corn on top.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minute. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  3. Stir in the cheese and sour cream.
  4. Serve topped with a bit of cilantro.
