I pretty much love these types of meals. Throw everything in a pot and turn to low and walk away. This one is super pantry friendly too, which is a definite bonus. I love eating this soup with a dollop of sour cream, grated cheddar and crunched up tortilla chips. Add a slice of lime and cilantro for even more flavor. Serve this up with a slice of cornbread and you have an easy meal for any day of the week.

anonymous, you can use the breasts, if that is what you like! They get done a bit quicker than the thighs.
Can you use frozen chicken breasts or does it have to be thighs?
it should be fine…just trim off all visible fat and it will still taste great.
I want to ask you that what if I removed all the fat out of the chicken…will this have any affect on the taste of the soup?
Wow I like your Chicken soup so much and very willing to try it out very very soon indeed…..I must say you always have very tempting recipes to share with us…Love to be here everytime.. ๐
I tried your Chicken Taco soup and I was so glad as it came out with real good taste indeed….I always find tasty recipes here and they are really so good…!!!
I just use pace's…sometimes the store brand.
What kind of salsa do you use?
trim up the thighs before throwing them in!
Are you supposed to leave the fat on the chicken when you put it in the crock pot? Looks delicious by the way, I wan't wait to try it!!
Elaine, that makes me so happy that you loved it. It is so easy too, that's what makes it so great.
I am making this today for the second time. I absolutely love this soup. It is probably the best soup I have ever tasted.
I will have to give this a try. I love the fact that the meat goes in frozen as I never remember to defrost ahead of time!
