Annie’s Casserole–a mashup of spaghetti, pork and beans, and seasoned ground beef, this easy Instant Pot dinner is savory, saucy, and ready in minutes.

Annie’s Casserole

This recipe is adapted from Mom Annie’s Hamburger Casserole on Food.com. The author says, “My Mother in Andrews N.C. has made this recipe for years. She makes it every when any of the family may get together. This is my take on this Family Favorite. She calls it her version of baked beans. I never take any home when I take this to any family get together or church socials.” I switched up the recipe a bit to be less heavy on the sweet (she uses a lot of ketchup and some brown sugar too). I liked my version! It sort of reminded me of chilighetti that I made once.

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey
  • Onion
  • Kosher salt
  • Black pepper
  • Beef or chicken broth–or water and Better than Bouillon
  • Spaghetti–or elbow macaroni
  • Pork and beans
  • Tomato sauce
  • BBQ sauce–or ketchup
  • Green bell pepper

Steps

Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in the salt and pepper. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Break up the spaghetti into 2 inch pieces. Scatter them into the pot. Dump the pork and beans and the tomato sauce evenly over the spaghetti. Add in the barbecue sauce and the green pepper.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 8-10 minutes and then move valve to venting. Remove the lid.

Stir well. Serve and enjoy! (I topped mine with a little cheddar cheese)

Notes/Tips

  • Serve with a green salad, garlic bread or coleslaw.
  • After adding the broth and scraping the pot, layer the pasta, then the beans and sauces on top without stirring to avoid a burn notice.
  • Stir in a little shredded cheddar or sprinkle it on top before serving for little something extra!
  • If you don’t have spaghetti, elbow macaroni or rotini works well and doesn’t need to be broken up.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1/2 tsp kosher salt
  • 1 tsp black pepper
  • 2 cups beef or chicken broth
  • 8 ounces spaghetti (or macaroni)
  • 1 (15 oz) can pork and beans
  • 2 (8 oz) cans tomato sauce
  • 2 Tbsp BBQ sauce or ketchup
  • 1/2 cup diced green bell pepper

Instructions
