My Mom’s Casserole–an easy Instant Pot dish with sausage, rice, peppers and onions.

My Mom's Casserole

My Mom’s Casserole

This is one of those easy, throw-it-all-in-the-pot kind of meals that just works. Savory sausage, tender rice, and a little crunch from the almonds (if you’re feeling fancy) all come together in one dish with minimal effort. The Lipton mix adds a nostalgic flavor. This is perfect for a weeknight when you don’t want to slave over the stove but need to feed your family something (they always be hungry ;).

This recipe is adapted from My Mom’s Sausage and Rice Casserole on All Recipes. The author says, “A delicious sausage and rice casserole with almonds, onions, peppers and dry chicken noodle soup mix. Try it! You’ll like it!”

Ingredients/Substitution Ideas

  • Ground pork sausage–I used Jimmy Dean. You can also use Italian sausage.
  • Yellow onion–or white onion
  • Celery
  • Green bell pepper–or another color bell pepper
  • Water
  • Converted rice–or long grain white rice
  • Lipton’s dry chicken noodle mix
  • Sliced almonds–optional

Steps

Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in onion, celery and bell pepper. Brown for 5 minutes.

Pour in half of the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the rice and Lipton’s mix. Pour in the remaining water.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 

Stir and serve topped with almonds, if desired.

Notes/Tips

  • Serve with steamed green beans or green salad.
  • Try adding in some diced carrots and mushrooms for some added veg.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

An easy Instant Pot dish with sausage, rice, peppers and onions.

  • 2 ribs of celery, sliced
  • 1 green bell pepper, diced
  • 1 3/4 cups water
  • 1 cup converted rice
  • 1 package Lipton’s dry chicken noodle mix
  • 1/4 cup sliced almonds, optional

    I’ve made a slightly modified version of this recipe several times, and it has quickly become a family favorite! I’ve never used the Lipton soup mix, and instead substituted seasonings that would be in that mix. (I do need to pick up some of the soup mix because I know it would be a great addition!). I’ve also made it when I didn’t have green peppers, so I just add a bit more of the other vegetables or added carrots. I love the versatility of this recipe, and I adore how quick and easy it is to put together on busy school nights! Thank you (and your Mom!) for this fantastic recipe!

    Another winner. You never fail me. Didn’t have almonds. Loved the addition of the soup was like a pilaf.perfectly cooked.Added fresh picked green beans at the end. Hubs loved it too.

    How many ounces in the soup mix? My store didn’t have Lipton soup mix but they had a Wyler brand called Mrs. Grass chicken noodle soup mix that is four ounces. I was expecting a couple packets like with onion soup mix, but it’s just one four ounce packet. Is the Lipton soup mix you use here four ounces? TY.
