Description

An all-in-one casserole loaded with seasoned ground beef, creamy salsa sauce, soft tortillas, and gooey cheese that is baked to bubbly perfection.


Ingredients

Scale
  • 16 oz lean ground beef
  • 1/2 cup diced onion
  • 1 small green pepper, cored and diced
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 Tbsp chili powder
  • 2 tsp cumin
  • Dash of smoked paprika
  • 1 (10.5 oz) can cream of chicken or cream of mushroom soup
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • 6 small corn tortillas, cut into 1 inch squares
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat oven to 350° F.
  2. Heat a pan over medium high heat. Add in the beef and break it up. Brown for 4 minutes. Stir in the onions and green peppers and saute for 4 more minutes. Drain off excess grease. Stir in the salt, pepper, onion powder, garlic powder, chili powder, cumin and smoked paprika. Turn off the heat.
  3. Stir in the cream of chicken soup, sour cream, salsa, and tortillas until combined. 
  4. Spread the mixture into a baking dish. Sprinkle with cheese.
  5. Bake for 30 minutes. Serve and enjoy!
