Alaskan Cowboy Casserole

Today’s recipe comes from Sonya’s Alaskan Cowboy Casserole. The original recipe uses a moose roast. While I think that sounds interesting I don’t think many of us has access to moose. So I changed it up and used a beef roast instead. You can really amp up this recipe and make it your own. Sonya says, “variations include adding cheese, beans, green chilies, green peppers, or corn to the meat layer.” You can use your Instant Pot or your Crockpot to cook the pot roast until it is tender.

Ingredients/Substitution Ideas

  • Beef broth–or water and Better than Bouillon
  • Beef chuck roast–or rump roast
  • Cajun seasoning
  • Minced dry onion
  • Salt and pepper
  • Barbecue sauce–use whatever brand you like best
  • Cheddar cheese
  • Pillsbury biscuits–or crescents or cornbread swirls

Steps

Pour broth into Instant Pot. Place roast into Instant Pot. Season it with the cajun seasoning. Sprinkle the onion on top.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 60 minutes. When time is up let pot sit until the pressure has released naturally (up to 20 minutes). Remove the lid.

Place roast on a cutting board and shred. Place the meat in a 9×13 inch baking dish and stir in the barbecue sauce. Salt and pepper to taste. Sprinkle the cheese over the top. Open the can of biscuits and place them evenly on top of the meat. 

Bake at 400 degrees for 12 minutes. 

Serve and enjoy!

Notes/Tips

  • Serve with broccoli salad or potato salad.
  • Try using crescent rolls or cornbread swirls instead of biscuits.
  • Add in corn and beans to make it more hearty and filling.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store the roast leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Easy Instant Pot roast with barbecue sauce and biscuits.


Ingredients

  • 1/2 cup beef broth
  • 1 1/2 pound beef chuck roast or rump roast, trimmed
  • 1 tsp cajun seasoning
  • 1 Tbsp minced dry onion
  • Salt and pepper
  • 1/2 cup barbecue sauce
  • 1/2 cup shredded cheddar cheese
  • 8 ounces pillsbury biscuits

Instructions

Slow Cooker Instructions:

  1. Pour broth into slow cooker. Place roast into slow cooker. Season it with the cajun seasoning. Sprinkle the onion on top.
  2. Cover and cook on low for 8 hours, or until tender.
  3. Place roast on a cutting board and shred. Place the meat in a 9×13 inch baking dish and stir in the barbecue sauce. Salt and pepper to taste. Sprinkle the cheese over the top. Open the can of biscuits and place them evenly on top of the meat. 
  4. Bake at 400 degrees for 12 minutes. 
  5. Serve and enjoy!

Notes

If you’d rather you can just bake the biscuits separately and serve them with the roast. (I did this to save time).

    what can you use instead of Cajun seasonings? I don’t have those. Any ideas?

      you could use dash seasoning, garlic salt, lemon pepper seasoning, steak or chicken seasoning…whatever you have on hand
