No Fuss 5 Ingredient Ground Beef Casserole
I like this recipe because it is so fast and easy to make, plus it tastes delicious. There is no chopping involved and only 5 main ingredients, so it is perfect for a busy night. It is really good as is, but you can take it over the top with toppings like sour cream, avocado, cilantro, extra cheese or Fritos. Make sure to use a salsa you really love since it flavors the whole dish (I like using Pace Picante Sauce). This also makes great meal prep for lunches throughout the week. Just add a side of black beans and corn and you’ve got a filling, easy lunch or dinner ready to go.
Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey. Double the meat to 16 ounces if you want it more meaty.
- Kosher salt–or ¼ tsp garlic salt.
- Black pepper
- Beef broth–or water and Better than Bouillon
- Converted rice–You can also use white rice, jasmine rice or basmati rice with a 5 minute pressure cook time. For brown rice use a 22 minute pressure cook time with a 10 minute natural pressure release.
- Picante sauce–or your favorite salsa instead. Mild, medium or hot all work depending on how spicy you like it.
- Pepper jack cheese–or Monterey Jack, cheddar or a Mexican cheese blend.
Steps
Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Brown for 5 minutes. Drain off excess grease. Stir in the salt and pepper.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Sprinkle in the rice. Evenly dump the picante sauce over the rice.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir in the pepper jack cheese and serve.


Notes/Tips
- Serve topped with some avocado, sour cream and cilantro. Serve with a side of corn.
- What is converted/parboiled rice? Don’t confuse converted rice (or sometimes it is called parboiled rice) with pre-cooked or minute rice. Parboiled rice has been processed in its husk by soaking, steaming, and drying. As a result, all the nutrients from the husk are absorbed into the grain before it’s removed. The starch content alters in the process, making cooked parboiled rice less sticky than regular white rice. The rice kernels aren’t clumpy and glued together instead they are more separated. I found a bag of parboiled rice at Walmart next to the normal long grain white rice. Sometimes I buy it at Winco in the bulk section. I have also found it in the orange box (Ben’s brand) next to other rices.
- This recipe is gluten free and can be dairy free if you leave out the cheese.
- Use mild salsa and Monterey Jack cheese for a milder casserole, or medium/hot salsa and pepper jack if you like some spice.
- Store leftovers in an airtight container* in the refrigerator for 4 days. Freeze leftovers for up to 3 months.

- 1 cup converted rice
- 1 cup picante sauce or salsa
- 1/2 cup shredded pepper jack cheese
