Description
An easy Instant Pot dinner made with ground beef, rice, salsa and pepper jack cheese for a quick, cheesy meal with hardly any prep.

- 8 oz lean ground beef
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1 1/2 cups beef broth
- 1 cup converted rice
- 1 cup picante sauce or salsa
- 1/2 cup shredded pepper jack cheese
Instructions
- Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Brown for 5 minutes. Drain off excess grease. Stir in the salt and pepper.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rice. Evenly dump the picante sauce over the rice.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Stir in the pepper jack cheese and serve.
Notes
Double the beef if you want this dish more meaty.
You can also use white rice, jasmine rice or basmati rice with a 5 minute pressure cook time. For brown rice use a 22 minute pressure cook time with a 10 minute natural pressure release.
