Creamy Garlic Parmesan Chicken and Potatoes–an easy Instant Pot or slow cooker dinner made with tender chicken thighs, red potatoes, plenty of garlic and a creamy lemon Parmesan sauce.

Creamy Garlic Parmesan Chicken and Potatoes
This easy dump and go dinner was totally delicious. It hit the spot and I kept eating until it was all gone! I loved using the red potatoes because they turn out creamy and don’t need to be peeled. The fresh lemon juice just adds so much flavor and brightness. And the garlicky parmesan creamy sauce is just so good you might lick it up off your plate.
Ingredients/Substitution Ideas
- Chicken broth–or water and Better than Bouillon chicken base
- Boneless skinless chicken thighs–you can also use 3 cups of rotisserie chicken
- Garlic cloves–I just threw them in whole
- Kosher salt
- Black pepper
- Onion powder
- Garlic powder–this adds another layer of garlic flavor along with the fresh garlic
- Poultry seasoning
- Red potatoes
- Cornstarch
- Heavy cream–or half-and-half
- Fresh lemon juice
- Shredded Parmesan cheese
Steps
Add broth, chicken, garlic, salt, pepper, onion powder, garlic powder, poultry seasoning and red potatoes into Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Turn your Instant Pot to the saute setting. In a small bowl stir together 2 Tbsp of cornstarch with 2 Tbsp of water, until smooth. Then stir the mixture into the Instant Pot. The cornstarch mixture will thicken up contents of pot quickly. Turn off saute setting.
Stir some of the hot liquid from pot into the cream to temper it. Stir it into the pot. Stir in the lemon juice and parmesan.

Serve and enjoy!


Notes/Tips
- What to serve with it: Serve with roasted broccoli, asparagus or green beans.
- Temper the cream: Stirring a little of the hot cooking liquid into the cream before adding it to the pot helps keep the cream from separating.
- Gluten free: this recipe is gluten free!
- Slow cooker timing: Each slow cooker cooks differently. Cook until you potatoes are tender.
- Storing leftovers: Store leftovers in an airtight container* in the refrigerator for 4 days. For best results, I would enjoy this one fresh or refrigerate the leftovers.

24 oz boneless skinless chicken thighs
6 garlic cloves

Slow Cooker Instructions
- Add broth, chicken, garlic, salt, pepper onion powder, garlic powder, poultry seasoning and red potatoes into slow cooker and stir.
- Cover and cook on low for 3 hours.
- In a small bowl stir together 2 Tbsp of cornstarch with 2 Tbsp of water, until smooth. Then stir the mixture into the slow cooker. The cornstarch mixture will thicken up contents in a few minutes.
- Stir some of the hot liquid from the slow cooker into the cream to temper it. Stir it into the slow cooker. Stir in the lemon juice and parmesan.
