Creamy Garlic Parmesan Chicken and Potatoes

Description

An easy Instant Pot or slow cooker dinner made with tender chicken thighs, red potatoes, plenty of garlic and a creamy lemon Parmesan sauce.


Ingredients

1 cup chicken broth

24 oz boneless skinless chicken thighs

6 garlic cloves

1 tsp kosher salt

½ tsp black pepper

½ tsp onion powder

1 tsp garlic powder

½ tsp poultry seasoning

16 oz red potatoes, quartered

2 Tbsp cornstarch

¼ cup heavy cream

2 Tbsp fresh lemon juice

½ cup shredded parmesan cheese


Instructions

Instant Pot Instructions

  1. Cut chicken into bite size pieces. Add broth, chicken, garlic, salt, pepper, onion powder, garlic powder, poultry seasoning and red potatoes into Instant Pot.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  3. Turn your Instant Pot to the saute setting. In a small bowl stir together 2 Tbsp of cornstarch with 2 Tbsp of water, until smooth. Then stir the mixture into the Instant Pot. The cornstarch mixture will thicken up contents of pot quickly. Turn off saute setting.
  4. Stir some of the hot liquid from pot into the cream to temper it. Stir it into the pot. Stir in the lemon juice and parmesan.
  5. Serve and enjoy!

Slow Cooker Instructions

  1. Add broth, chicken, garlic, salt, pepper onion powder, garlic powder, poultry seasoning and red potatoes into slow cooker and stir.
  2. Cover and cook on low for 3 hours.
  3. In a small bowl stir together 2 Tbsp of cornstarch with 2 Tbsp of water, until smooth. Then stir the mixture into the slow cooker. The cornstarch mixture will thicken up contents in a few minutes.
  4. Stir some of the hot liquid from the slow cooker into the cream to temper it. Stir it into the slow cooker. Stir in the lemon juice and parmesan.
  5. Serve and enjoy!
