Crockpot Mississippi Steak Bites are made with tender beef stew meat, ranch seasoning, au jus, butter, and pepperoncinis for an easy slow cooker or Instant Pot dinner that’s packed with bold flavor.

Crockpot Mississippi Steak Bites

Mississippi roast flavors have been a favorite in our house for years, so I knew turning those flavors into tender little steak bites would be a winner. I love using beef stew meat because it’s usually less expensive than steak, but after a few hours in the slow cooker it becomes incredibly tender. The buttery, tangy sauce is perfect spooned over mashed potatoes or egg noodles, and don’t forget to add plenty of the sauce. Greg and I both agreed this is one of those dinners that tastes even better the next day after all the flavors have had more time to come together.

Ingredients/Substitution Ideas

  • Olive oil
  • Beef stew meat–or chuck roast cut into bite-sized pieces or sirloin steak cut into pieces
  • Dried minced onion
  • Garlic powder–or minced fresh garlic
  • Water
  • Au jus gravy mix–or brown gravy mix (the flavor will be slightly different)
  • Dry ranch dressing mix
  • Butter
  • Pepperoncini juice–use juice from the pepperoncini jar
  • Sliced pepperoncinis–or banana peppers

Steps

Turn Instant Pot to sauté setting. When display says HOT add in the oil oil and swirl around. Add in the beef stew meat (working in batches, if necessary) and sear the meat. 

Stir in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Dump in the onion, garlic powder, au jus, ranch dressing mix, butter and pepperoncini juice.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 20 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the pepperoncinis. Serve meat and sauce over egg noodles or mashed potatoes.

Notes/Tips

  • Serve over mashed potatoes, buttered egg noodles or rice. Add a side of steamed green beans or broccoli.
  • Searing the beef first adds extra flavor, but if you’re in a hurry you can skip that step and still have a delicious meal.
  • Stir the pepperoncinis in at the end so they keep a little bit of their texture and bright flavor.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for 4 days. This recipe freezes very well. Cool completely, then freeze in freezer-safe containers for up to 3 months. Thaw overnight in the refrigerator before reheating.

Ingredients

Scale
  • 1 Tbsp olive oil
  • 32 oz beef stew meat
  • 1/4 dried minced onion
  • 2 tsp garlic powder
  • 2 cup water
  • 1 oz au jus packet
  • 3 Tbsp dry ranch dressing mix
  • 2 Tbsp butter
  • 1/2 cup pepperoncini juice
  • 1/2 cup sliced pepperoncinis (I used medium heat)

Instructions

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the olive oil and swirl around. Add in the beef stew meat (working in batches, if necessary) and sear the meat. Transfer to the slow cooker.
  2. Stir in the onion, garlic powder, water, au jus, ranch dressing mix, butter and pepperoncini juice.
  3. Cover slow cooker and cook on low for 4-5 hours, or until meat is tender.
  4. Stir in the pepperoncinis. 
  5. Serve meat and sauce over egg noodles or mashed potatoes. 

Instant Pot Instructions:

  1. Turn Instant Pot to sauté setting. When display says HOT add in the oil oil and swirl around. Add in the beef stew meat (working in batches, if necessary) and sear the meat.
