Pasta Alla Zozzona–a one pot Instant Pot pasta recipe with Italian sausage, marinara sauce, parmesan and bacon that tastes like a cross between pasta carbonara and baked ziti.

Pasta Alla Zozzona

This pasta is basically a mash up between carbonara and baked ziti, and it works so well. The Italian sausage flavors every single bite so you don’t need a long list of spices. The bacon comes in and takes the whole thing over the top. If you want to add in some extra veggies consider sliced or chopped mushrooms and spinach. Greg and Skyler both declared this meal as a keeper immediately.

Ingredients/Substitution Ideas

  • Italian sausage–or ground turkey Italian sausage
  • Onion–or shallot
  • Garlic cloves–or jarred minced garlic
  • Chicken broth–or water and Better than Bouillon chicken base
  • Rigatoni–or penne
  • Marinara sauce
  • Egg yolks
  • Shredded parmesan–or Pecorino Romano
  • Black pepper–I like coarse black pepper
  • Bacon crumbles–or cooked chopped pancetta
  • Fresh basil

Steps

Turn Instant Pot to sauté setting. When display says HOT add in the sausage and break it up. Add in the onions and brown for 5 minutes. Drain off excess grease. Stir in the garlic.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the rigatoni. Dump the marinara sauce on the top. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 

In a small bowl whisk together the egg yolks, parmesan and black pepper. Slowly stir the egg sauce into the Instant Pot. 

Stir in the bacon.

Serve topped with some fresh chopped basil.

Notes/Tips

  • Serve with a green salad. We love the Olive Garden brand Italian dressing.
  • I used my pink 4 quart Instant Pot*. You can also make this in an 6 or 8 quart pot.
  • Rigatoni works great because the sauce gets inside the noodles, but penne or ziti will also work.
  • Slowly stir in the egg yolk mixture after cooking while the pasta is hot. This creates a creamy sauce similar to carbonara.
  • Fresh basil on top really brightens up the rich flavors.
  • Store leftovers in an airtight container* in the refrigerator for up to 3-4 days. I wouldn’t recommend freezing this one because the egg-based sauce can become grainy after thawing.

Description

A one pot Instant Pot pasta recipe with Italian sausage, marinara sauce, parmesan and bacon that tastes like a cross between pasta carbonara and baked ziti.


Ingredients

  • 16 oz Italian sausage
  • 1 cup diced onion
  • 3 garlic cloves, minced
  • 2 cups chicken broth
  • 8 oz rigatoni
  • 1 (25 oz) jar marinara sauce (I used Mezzetta brand)
  • 3 egg yolks
  • 1/4 cup shredded parmesan
  • 1/4 tsp black pepper
  • 1/4 cup bacon crumbles
  • Fresh basil, for topping

Instructions

  1. Turn Instant Pot to sauté setting. When display says HOT add in the sausage and break it up. Add in the onions and brown for 5 minutes. Drain off excess grease. Stir in the garlic.

  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 
  5. In a small bowl whisk together the egg yolks, parmesan and black pepper. Stir the egg mixture in slowly while the pasta is hot but not aggressively boiling so the sauce stays smooth and creamy instead of scrambling.
  6. Stir in the bacon.
  7. Serve topped with some fresh chopped basil.
