Rustic Root Chicken Pot

I needed a quick and easy slow cooker recipe for a busy day. I wanted it to be an all in one pot meal so I didn’t have to worry about side dishes. This is what I came up with and it turned out great. Skyler and his friends scarfed it down in no time. The leftovers were yummy too! Enjoy this easy crockpot meal for your busy day.

Ingredients/Substitution Ideas

  • Boneless skinless chicken thighs–or boneless skinless chicken breasts
  • Russet potatoes–or red potatoes
  • Carrots–or baby carrots
  • Dry Italian dressing mix–I use the Good Seasons brand
  • Chicken broth–or water and Better than Bouillon chicken base
  • Cream of chicken soup–or cream of mushroom, cream of celery

Steps

Add chicken, potatoes and carrots into slow cooker. Sprinkle with the Italian dressing mix. Stir in the broth and chicken soup. 

Cover and cook on low for 4 hours. 

Break up the chicken with a spoon. 

Scoop into bowls and enjoy!

Notes/Tips

  • This is a full meal on its own, but it’s great with a side of crusty bread, dinner rolls or a green salad.
  • I used my 6 quart Ninja slow cooker. You can also use a 5 or 8 quart slow cooker.
  • Try stirring in a handful of frozen peas for the last 20 minutes of cooking time.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Ingredients

  • 4–6 boneless skinless chicken thighs (frozen is okay)
  • 4 medium Russet potatoes, peeled and cut into 1 inch cubes
  • 4 large carrots, peeled and cut into 1 inch chunks
  • 1 (.70 oz) packet dry Italian dressing
  • 1 cup chicken broth
  • 1 (10.5 oz) can cream of chicken soup

Instructions

  1. Add chicken, potatoes and carrots into slow cooker. Sprinkle with the Italian dressing mix. Stir in the broth and chicken soup. 
  2. Cover and cook on low for 4 hours. 
  3. Break up the chicken with a spoon. 
  4. Scoop into bowls and enjoy!
