Crunchy Munchy Chicken–easy oven-baked chicken with a crunchy cornflake and potato chip coating that turns golden and crisp in the oven.

Crunchy Munchy Chicken

Skyler and I LOVED this chicken. It only has a few ingredients but it’s so satisfying. Dipping the chicken in butter keeps it extra juicy and the cornflakes and potato chips bake up into a crunchy, salty topping. It’s an old fashioned recipe but oh so good! Enjoy! (Recipe adapted from All Recipes).

Ingredients/Substitution Ideas

  • Butter
  • Boneless skinless chicken thighs–or boneless skinless chicken breasts
  • Cornflakes
  • Potato chips
  • Kosher salt
  • Black pepper

Steps

Heat oven to 375° F.

Combine the cornflakes, potato chips, salt and pepper, mix well.

Dip each piece of chicken into the butter and then roll the chicken in the chip/cornflakes mixture and coat well. Place chicken in a 9×9 inch baking dish. 

Pour remaining chip and cornflake mixture on top of the chicken. Drizzle the remaining butter on top. 

Bake for 35 minutes.

Serve and enjoy!

Notes/Tips

  • Serve with baked potatoes, salad and steamed broccoli.
  • Place the cornflakes and chips in a sealed plastic bag and use a rolling pin to crush them, or pulse briefly in a food processor. You want coarse crumbs, not fine dust.
  • Store leftovers in an airtight container* in the refrigerator for up to 3 days. Reheat in the oven or air fryer to bring back the crispiness. Microwaving works, but the coating won’t be crunchy munchy anymore. You can freeze leftovers, but the coating will lose crunch when reheated. For best texture, enjoy fresh.

  • 6 fresh boneless skinless chicken thighs (or 4 chicken breasts)
