Description
Easy oven-baked chicken with a crunchy cornflake and potato chip coating that turns golden and crisp in the oven.

- 1/2 cup melted butter
- 6 fresh boneless skinless chicken thighs (or 4 chicken breasts)
- 1 cup crushed cornflakes
- 1 cup crushed potato chips
- 1/4 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Heat oven to 375° F.
- Combine the cornflakes, potato chips, salt and pepper, mix well.
- Dip each piece of chicken into the butter and then roll the chicken in the chip/cornflakes mixture and coat well. Place chicken in a 9×9 inch baking dish.
- Pour remaining chip and cornflake mixture on top of the chicken. Drizzle the remaining butter on top.
- Bake for 35 minutes.
