Description

Easy oven-baked chicken with a crunchy cornflake and potato chip coating that turns golden and crisp in the oven.


Ingredients

Scale
  • 1/2 cup melted butter
  • 6 fresh boneless skinless chicken thighs (or 4 chicken breasts)
  • 1 cup crushed cornflakes
  • 1 cup crushed potato chips
  • 1/4 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. Heat oven to 375° F.
  2. Combine the cornflakes, potato chips, salt and pepper, mix well.
  3. Dip each piece of chicken into the butter and then roll the chicken in the chip/cornflakes mixture and coat well. Place chicken in a 9×9 inch baking dish. 
  4. Pour remaining chip and cornflake mixture on top of the chicken. Drizzle the remaining butter on top. 
  5. Bake for 35 minutes.
  6. Serve and enjoy!
