Primetime Casserole–an easy chicken fajita style dish that can be baked in the oven or slow cooked. With bell peppers, spices, and melty cheese it is a crowd-pleasing flavorful dinner.

Primetime Casserole

This sheet pan (or slow cooker!) chicken fajita dish is a total weeknight win. It comes together very fast. It’s savory and delish! You get tender, juicy chicken, sweet roasted peppers, and gooey cheese all in one easy pan. Plus, cleanup is minimal and the leftovers are even better the next day! (Recipe adapted from Prime Time Peppers and Chicken Fajita Casserole).

Ingredients/Substitution Ideas

  • Onion–yellow, white or red
  • Red bell pepper
  • Green bell pepper
  • Chicken tenderloins–fresh or frozen
  • Cumin
  • Chili powder
  • Garlic powder
  • Paprika
  • Kosher salt
  • Black pepper
  • Olive oil–or canola oil
  • Cheddar–or mozzarella cheese

Steps

Heat oven to 375° F. On a sheet pan add all the ingredients except cheese. Toss well so that peppers and chicken are coated in the oil and seasonings.

Bake for 25 minutes for frozen chicken tenderloins or 15-17 minutes for fresh chicken tenderloins. Toss again. Sprinkle cheese on top and put the pan back in the oven for a couple minutes to melt the cheese. Serve with tortillas or rice.

Notes/Tips

  • Serve with warm tortillas, rice, beans, or over salad for different vibes.
  • Try using chicken thighs instead of tenders. Just cut them into strips or bite-sized pieces so they cook evenly and quickly like tenderloins. Thighs are juicier and more forgiving if slightly overcooked, making them a great swap!
  • I served this with some rice I threw in the Instant Pot with some picante sauce and a few sprinkles of garlic powder.
  • This recipe is gluten free.
  • I used my USA sheet pan*. I love this sheet pan for baking cookies (no spray or parchment needed).
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Ingredients

  • 1 medium onion, halved and thinly sliced
  • 1 red bell pepper, cored and sliced
  • 1 green bell pepper, cored and sliced
  • 2 pounds chicken tenderloins
  • 1 tsp cumin
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 2 tsp paprika
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 3 Tbsp olive oil
  • 1 cup shredded cheddar or mozzarella cheese

Instructions

Sheet Pan Instructions:

  1. Heat oven to 375° F.

Slow Cooker Instructions:

  1. Add all ingredients except cheese into slow cooker and toss well so that chicken and peppers are coated in oil and seasonings.
  2. Cover and cook on low for  2-3 hours. 
  3. Sprinkle the cheese on top and let it melt.
  4. Serve with tortillas or rice.
