Description
An easy chicken fajita style dish that can be baked in the oven or slow cooked. With bell peppers, spices, and melty cheese it is a crowd-pleasing flavorful dinner.
Ingredients

- 1 medium onion, halved and thinly sliced
- 1 red bell pepper, cored and sliced
- 1 green bell pepper, cored and sliced
- 2 pounds chicken tenderloins
- 1 tsp cumin
- 2 tsp chili powder
- 1 tsp garlic powder
- 2 tsp paprika
- 1 tsp kosher salt
- 1 tsp black pepper
- 3 Tbsp olive oil
- 1 cup shredded cheddar or mozzarella cheese
Instructions
Sheet Pan Instructions:
- Heat oven to 375° F.
- On a sheet pan add all the ingredients except cheese. Toss well so that peppers and chicken are coated in the oil and seasonings.
- Bake for 25 minutes for frozen chicken tenderloins or 15-17 minutes for fresh chicken tenderloins.
- Toss again. Sprinkle cheese on top and put the pan back in the oven for a couple minutes to melt the cheese.
- Serve with tortillas or rice.
Slow Cooker Instructions:
- Add all ingredients except cheese into slow cooker and toss well so that chicken and peppers are coated in oil and seasonings.
- Cover and cook on low for 2-3 hours.
- Sprinkle the cheese on top and let it melt.
- Serve with tortillas or rice.
