Description

An easy chicken fajita style dish that can be baked in the oven or slow cooked. With bell peppers, spices, and melty cheese it is a crowd-pleasing flavorful dinner.


Ingredients

Scale
  • 1 medium onion, halved and thinly sliced
  • 1 red bell pepper, cored and sliced
  • 1 green bell pepper, cored and sliced
  • 2 pounds chicken tenderloins
  • 1 tsp cumin
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 2 tsp paprika
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 3 Tbsp olive oil
  • 1 cup shredded cheddar or mozzarella cheese

Instructions

Sheet Pan Instructions:

  1. Heat oven to 375° F. 
  2. On a sheet pan add all the ingredients except cheese. Toss well so that peppers and chicken are coated in the oil and seasonings.
  3. Bake for 25 minutes for frozen chicken tenderloins or 15-17 minutes for fresh chicken tenderloins.
  4. Toss again. Sprinkle cheese on top and put the pan back in the oven for a couple minutes to melt the cheese.
  5. Serve with tortillas or rice. 

Slow Cooker Instructions:

  1. Add all ingredients except cheese into slow cooker and toss well so that chicken and peppers are coated in oil and seasonings.
  2. Cover and cook on low for  2-3 hours. 
  3. Sprinkle the cheese on top and let it melt.
  4. Serve with tortillas or rice.
