Sue’s Casserole–a 4-ingredient chicken and rice dish that you can make in minutes in your Instant Pot.

Sue’s Casserole
Today’s recipe because is a super easy quick dinner idea. Basically it’s a few pantry items with some cut up chicken that cooks in just 3 minutes under pressure. It’s perfect for busy weeknights when you want something easy but cozy. This recipe is adapted from Mama Sue’s Rice-A-Roni chicken casserole.
Ingredients/Substitution Ideas
- Water
- Chicken flavored Rice-A-Roni–or long grain wild rice blend rice a roni
- Boneless skinless chicken thighs–or breasts
- Cream of chicken soup–or cream of chicken and herbs, cream of mushroom, cream of celery
- Sour cream
- Sliced almonds–optional
Steps
Pour water into Instant Pot. Sprinkle in the rice a roni. Add the chicken on top and sprinkle the seasoning packet on top of the chicken. Spoon the cream of chicken on top.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
Stir in the sour cream.

Scoop onto plates and top with sliced almonds, if desired.

Notes/Tips
- Serve with roasted or steamed broccoli. You can also stir in a bag of cooked frozen veggies in with the rice like some peas, mixed vegetables, etc.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
