Description

A 4-ingredient chicken and rice dish that you can make in minutes in your Instant Pot.


Ingredients

Scale
  • 1 1/4 cups water
  • 1 (6.9 oz) box chicken flavored Rice-A-Roni
  • 12 oz boneless skinless chicken thighs, trimmed of fat and cut into bite size pieces
  • 1/2 of a can of cream of chicken soup
  • 1/4 cup sour cream
  • sliced almonds, optional

Instructions

  1. Pour water into Instant Pot. Sprinkle in the rice a roni. Add the chicken on top and sprinkle the seasoning packet on top of the chicken. Spoon the cream of chicken on top.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  3. Stir in the sour cream.
  4. Scoop onto plates and top with sliced almonds, if desired.
