Description
A 4-ingredient chicken and rice dish that you can make in minutes in your Instant Pot.

- 1 1/4 cups water
- 1 (6.9 oz) box chicken flavored Rice-A-Roni
- 12 oz boneless skinless chicken thighs, trimmed of fat and cut into bite size pieces
- 1/2 of a can of cream of chicken soup
- 1/4 cup sour cream
- sliced almonds, optional
Instructions
- Pour water into Instant Pot. Sprinkle in the rice a roni. Add the chicken on top and sprinkle the seasoning packet on top of the chicken. Spoon the cream of chicken on top.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Stir in the sour cream.
- Scoop onto plates and top with sliced almonds, if desired.
