Countryside Casserole–beefy egg noodles with a creamy tomato sauce made fast in the Instant Pot.

Countryside Casserole
This easy noodle bake with seasoned ground beef, tomato sauce and cream cheese is very simple but it’s full of flavor! You’re likely to have all the ingredients on hand right now. Plus it only needs a 1 minute pressure cook time so you can be eating sooner than later. Greg and I loved this dinner and saved the leftovers for lunch tomorrow! Yay!
Ingredients/Substitution Ideas
- Lean ground beef–I used 93/7
- Kosher salt
- Black pepper
- Garlic powder
- Onion powder
- Smoked paprika
- Worcestershire sauce
- Beef or chicken broth–or water and Better than Bouillon
- Egg noodles–or another short cut pasta (see notes section)
- Tomato sauce
- Cream cheese
- Parmesan cheese–or whole milk mozzarella
Steps
Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic power, onion powder, smoked paprika and Worcestershire sauce.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Evenly add in the egg noodles.

Pour the tomato sauce over the egg noodles. Place the cream cheese on top.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to minute. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir well. Sprinkle with a bit of cheese and serve.

Notes/Tips
- Serve with salad or broccoli.
- Try adding in 4 ounces of sliced mushrooms when you brown the beef.
- Try stirring in some chopped spinach when the pressure cooking time is up.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
- Other recipes you can make with Worcestershire sauce are Maritime Madness and Slow Cooker Grandma’s Sunday Roast.
- If you use another type of pasta you may need to adjust the cooking time. Here is the formula: look at the back of the box of pasta and see how many minutes it says to boil the pasta. If it’s 10 minutes you divide that number by 2 (=5) and then subtract 2 minutes. So you would pressure cook for 3 minutes. I usually use a 5-10 minute natural pressure release for pasta.

I believe that the directions are m>ssing the pressure cook time.
How many minutes?
I usually jump right to the recipe when I see interesting recipes. As I looked through the whole posting, I see that the cook time is 1 minute.
Can the countryside casserole be made in the crockpot?
unfortunately this recipe is best in the IP since the noodles tend to get mushy in the slow cooker. Sorry!
